Ingredients

  • 150 g. of Swallow Brand Chinese Noodles
  • 7-8 pieces of peeled shrimp
  • 2 eggs
  • 1 tbsp. dried shrimp
  • 1 tbsp. sliced yellow hard tofu
  • 100 g. bean sprouts
  • 30 g. sliced chive leaves
  • 3 tbsp. oil
  • Pad-Thai sauce: 1 tbsp. fish sauce, 1 tbsp. tamarind, 1 tbsp. cane coconut sugar
  • Side dish: roasted peanut, fresh lime, banana blossom, bean sprouts, ground chili

Directions

Chinese Noodle’s Preparation
  1. ตั้งไฟแรง ต้มน้ำให้เดือดจัด ใส่เส้นหมี่เตี๊ยวตรานกนางแอ่น ลงในหม้อ
    คำแนะนำ : การใช้น้ำต้มในปริมาณมาก จะช่วยลดความเค็มของเส้น และทำให้เส้นเหนียวนุ่ม
    ปริมาณน้ำที่เหมาะสมในการต้มเส้น
    100 – 300   กรัม
    :  น้ำ   2 ลิตร
    400 – 600   กรัม
    :  น้ำ   4 ลิตร
    700 – 1000 กรัม
    :  น้ำ   6 ลิตร
    In a large pot, set on high heat, boil liters of water* until boiling then add Swallow Brand Chinese Noodles.
    Tips : Recommendations: Use large amounts of water to reduce the noodle's saltiness and make the noodles soft and sticky.
    The proper amount of water for boiling noodles.
    100 - 300 g
    : 2 liters of water
    400 – 600 g
    : 4 liters of water
    700 – 1000 g
    : 6 liters of water
  2. Boil for 3-4 minutes (After boiling for 3 minutes, check the cooked noodles by tasting the noodles, choose the softness you like)
  3. Drain the noodle into the colander.
  4. To firm the noodle rinse the noodles past cold water. If the noodle still salty, rinse the noodles past cold water again)
  5. Drain the Swallow Brand Chinese Noodles into the colander.
  6. ( Idea: to elevate your Chinese noodle experience in another menu such as Chicken noodles, Khao Soi noodles, Spaghetti, and many more )
Directions Chinese Noodles Pad Thai
  1. Set a pot on medium heat, add fish sauce, tamarind, and cane coconut sugar braised until striped. Set aside.

  2. Set a pan on medium heat. Add cooking oil.

  3. When the oil is hot, add chopped preserved radish and sliced yellow hard tofu. Stir until sliced yellow hard tofu is cooked.

  4. Add peeled shrimp. Stir until the peeled shrimp is cooked.

  5. Add Swallow Brand Chinese Noodles and Pad Thai sauce.

  6. Add eggs on the empty side. When the eggs are cooked, Add dried shrimp, bean sprouts, and sliced chive leaves.

  7. Ready to serve, eat with roasted peanuts, fresh lime, banana blossom, bean sprouts, and ground chili for better taste.

Pad Thai sauce’s preparation

  1. Combine all ingredients in a small saucepan over medium heat

  2. Simmer until the brown sugar is dissolved, 2 to 3 minutes
    (Do not let it reduce any further once the sugar is dissolved or it won't be the right consistency for making Pad Thai)
